
Sweet Potato Broccoli Pasta

INGREDIENTS
200g - Sweet potatoes, peeled and cut into small cubes
4 cups - Water
150g - Spaghetti, uncooked
½ tb - Vegetable oil
100g - Peas, fresh or frozen
100g - Broccoli, cut into small florets
2 tb - Milk, low fat
150g - Yogurt, low fat
40g - Parmesan cheese, reduced fat, grated
¼ tsp - Ground black pepper
UTENSILS
Saucepan, Non-stick pan, Chopping board, Knife
INSTRUCTIONS
1. Add the sweet potatoes and water to a saucepan. Bring to a boil then reduce heat to low. Cook the sweet potatoes in simmering water for 12 to 15 minutes until soft. Drain well.
2. Cook the pasta according to the package instructions until tender. Drain.
3. Heat the oil in a non-stick pan over medium heat. Add the garlic, Cook for a minute.
4. Add the broccoli and peas. Cook for 3 minutes.
5. Add the pasta, sweet potatoes, milk and yogurt. Heat gently for 2 minutes until all warmed through and slightly thickened.
6. Sprinkle with the cheese and ground black pepper. Serve.
