Sweet Potato and Green Bean Salad

INGREDIENTS

2 - Sweet potatoes, peeled, cut into bite-size pieces


1 tsp - Olive oil spray


2 cups - Green beans, trimmed, cut into 2-inch length


¼ cup - Water


1 tb - Extra virgin olive oil


2 tb - Lemon juice


1 tsp - Dried Italian herbs


1 cup - Baby spinach


2 tb - Almonds, chopped

UTENSILS

Oven, Baking tray, Baking paper, Microwave, Bowl, Microwave-safe dish, Chopping board, Knife

INSTRUCTIONS

1. Preheat the oven to 200°C. Line a baking tray with baking paper.


2. Arrange the sweet potatoes on the lined tray and spray lightly with the oil. Bake for 15-20 minutes until tender and lightly golden.


3. Add the green beans and ¼ cup of water in a microwave-safe dish. Cover and microwave on high for 4 minutes.


4. Combine the extra virgin olive oil, lemon juice and dried herbs in a bowl.


5. Combine the green beans, sweet potato and spinach in a serving bowl. Drizzle over the dressing and top with chopped almonds to serve.
