Sweet Potato Peanut Butter Balls

INGREDIENTS

1 cup - Sweet potato, peeled, cut into cubes


¼ cup - Peanut butter, chunk style, no salt and no added sugar


½ cup - Rolled oats


½ cup - Almond meal


2 tb - Hemp seeds


1 tsp - Flaxseeds


1 tsp - Sunflower seeds, roasted


1 tsp - Black sesame seeds, roasted


2 tsp - Cinnamon


1 tb - Honey


1tsp - Vanilla extract


1⁄8 tsp - Sea salt

UTENSILS

Mixing bowl, Fork, Container, Chopping board, Knife

INSTRUCTIONS

1. Boil the sweet potato in a cooking pot until they are cooked through. Set aside and let cool.


2. Mash the sweet potato using the curved back part of a fork.


3. Place the mashed sweet potato, oats, almond meal, hemp seeds, sesame seeds, flaxseeds, sunflower seeds, peanut butter, honey, cinnamon, vanilla and sea salt into a bowl and stir until all ingredients are well combined.


4. Refrigerate the mixture for 15 minutes. Roll chilled mixture into about 10 2-inch balls.


5. Place the energy balls back into the refrigerator for 15 minutes until set and cold.


6. Store in a covered container in the refrigerator for 3 to 5 days.
