
Sweet Potato Stuffed with Salmon

INGREDIENTS
1 pc - Sweet potato, raw
1 tsp - Butter, without salt
1 pinch - Black pepper
90g - Salmon, canned, unflavoured
2 tbsp - Fresh basil
¼ cup - Cucumber, peeled, raw
20g - Goat cheese, semisoft type
UTENSILS
Microwave, Chopping board, Knife
INSTRUCTIONS
1. Poke holes on the top of the sweet potato using a fork.
2. Microwave the sweet potato on a high setting until tender, about 10 minutes.
3. Slice the sweet potato in half lengthwise. Spread the unsalted butter on each side and season with black pepper.
4. Stuff with salmon, cucumber, basil and goat cheese. Serve.
