Sweet and Sour Sesame Brussels Sprouts with Ground Pork

INGREDIENTS
340g - Lean pork, ground
½ cup - Chicken broth, less/ reduced sodium, ready to serve
1 tb - Soy sauce, reduced salt
2 tb - Maple syrup, flavoured, sugar free
2 tb - Distilled vinegar
1 tb - Mustard dressing
2 tb - Water
2 tsp - Psyllium, dried
½ tsp - Chili flakes
4 cups - Brussels sprouts, raw, halved
1 cup - Carrots, raw, julienned
3 cups - Brown rice, long-grain, cooked
2 tsp - Sesame seeds
UTENSILS
Large non-stick skillet, Chopping Board, Knife
INSTRUCTIONS
1. Combine the low sodium chicken stock, reduced salt soy sauce, sugar-free maple syrup, distilled vinegar, mustard, chilli flakes and psyllium husk and water in a bowl. Mix well, cover and set aside.
2. Heat a large non-stick skillet over medium-high heat. Add the ground pork and fry until brown. Remove the pork from the skillet and transfer it to a plate and set aside.
3. In the same skillet, add the brussels sprouts and carrots and sauté until slightly wilted.
4. Pour in the stock mixture and add again the cooked pork. Bring the mixture to a boil until thickened, about 1-2 minutes. Remove from the heat.
5. Serve on top of a bowl of cooked brown rice and garnish with sesame seeds.
