
Tuna and Fennel Salad

INGREDIENTS
2 tb - Orange juice
1 ½ tsp - Dijon mustard
1 ⅓ tb - Olive oil
1 ½ cups - Fennel, thinly sliced
1 cup - Grape tomatoes, halved
⅔ cup - Red onions, thinly sliced
1 tb - Raisins
1 tb - Pine nuts, roasted
1 can - Water-packed light tuna, canned, drained
½ cup - Cannellini beans, canned, drained
UTENSILS
Bowl, Whisk, Chopping board, Knife
INSTRUCTIONS
1. In a large bowl, whisk together the orange juice, lemon juice and mustard until well combined. Whisk in the olive oil.
2. Add the fennel, tomatoes, onions, raisins, pine nuts cannellini beans and tuna. Toss gently.
3. Serve.
