INGREDIENTS

4 - Potatoes, scrubbed


1 cup - Cannellini beans, canned, drained


200g - Tuna in water, drained and flaked


1 tb - Tomato purée


1 - Red capsicum, deseeded and chopped


2 - Tomatoes, chopped


2 - Spring onions, finely chopped


2 tsp - White wine vinegar


¼ tsp - Ground black pepper

UTENSILS

Oven, Bowl, Chopping board, Knife

INSTRUCTIONS

1. Preheat the oven to 200°C.


2. Prick the potatoes. Place them on the baking tray. Bake in the oven for 1 hour until tender.


3. Mix the cannellini beans, tuna, capsicum, tomatoes, spring onions, vinegar, tomato purée and black pepper in a bowl.


4. Cut the baked potatoes in half. Top them with the salsa mixture.


5. Serve.
