INGREDIENTS

2 tsp - Olive oil, extra virgin


2 tsp - Dried Italian herbs


2 tsp - Lemon juice


1 cup - Brown lentils, rinsed and drained


4 cups - Baby spinach


2 - Tomatoes, chopped


4 - Spring onions, sliced


⅓ cup - Feta cheese, reduced fat, crumbled


2 tb - Walnuts, roasted, chopped

UTENSILS

Bowl, Whisk, Chopping board, Knife

INSTRUCTIONS

1. To make the dressing, whisk together the olive oil, lemon juice and herbs.


2. Combine all remaining ingredients in a serving bowl. Drizzle with dressing to serve.
