INGREDIENTS

3 cups - Brown rice, cooked


3 - Eggs, beaten


½ cup - Shrimp, cooked, chopped


½ cup - Chicken, skinless, diced


½ cup - Peas


½ cup - Carrots, diced


¼ cup - Corn


3 cloves - Garlic, minced


2 tb - Green onions, sliced


2 tb - Soy sauce


1 tsp - Sesame oil


1 tb - Vegetable oil


1 pinch - White pepper


1 pinch - Salt

UTENSILS

Wok, Chopping board, Knife

INSTRUCTIONS

1. Heat ½ tbsp oil in a wok over medium heat. Add the eggs, scramble gently, remove and set aside.


2. Heat the remaining oil. Add the garlic and stir for 20 seconds until fragrant.


3. Add the shrimp and chicken. Stir-fry for 1 minute.


4. Stir in the peas, carrots and corn. Cook for 1 minute.


5. Add the brown rice, breaking up the clumps. Stir-fry for 2–3 minutes.


Add the soy sauce, sesame oil, white pepper and salt.


6. Return the eggs to the pan. Toss well.


7. Garnish with the green onions.
