
Zucchini Noodles with Shrimp and Peas

INGREDIENTS
6 pcs - Small, Zucchini, green, unpeeled, spiralized
180g - Shrimps, fresh, headless and peeled
5 tb - Olive oil
2 ½ cups - Green peas, frozen, thawed
6 cloves - Garlic,minced
1 - Lemon, fresh, zest and juiced
1/2 tsp - Salt
1 pinch - Ground black pepper
1 tb - Mint, finely chopped
UTENSILS
Saucepan, Chopping board, Knife, Grater, Spiralizer or Julienne peeler
INSTRUCTIONS
1. Heat a tablespoon of olive oil in a saucepan, add peeled shrimp. Fry the shrimps until the flesh turns white. Transfer the shrimps into a bowl set aside.
2. In the same saucepan, add the garlic and fry for 1 minute or until light brown.
3. Add the peas and sauté for 3 minutes.
4. Toss in the spiralized zucchini and sauté for another 4 minutes.
5. Add the lemon zest, lemon juice and the remaining olive oil. Sauté for another minute.
6. Mix in the cooked shrimps and season with salt and pepper to taste.
7. Garnish with chopped mint and serve.
