Vegetarian Lentil Burger

INGREDIENTS

INSTRUCTIONS

1.

Boil lentils in water until tender, about 35 to 45 minutes. Drain and transfer to a boil. Slightly mash lentils.

2.

Heat oil in a frying pan. Fry garlic, onion, sweet potato and carrot until tender. Let cool slightly. Add to lentils.

3.

Add breadcrumbs, salt, paprika, and cumin. Mix well to combine. Form into patties, about 8 to 10 pieces. Fry patties until golden brown, about 3 minutes per side. Drain on paper towels.

4.

Combine yogurt, parsley, and green onions in a bowl. Season with pepper.

5.

Assemble burgers: Spread yogurt mixture on hamburger buns. Fill with tomato, lettuce, and lentil patty. Serve immediately.
